Whole Wheat Banana Pancakes

Child cracking an egg and scooping pancake batter

How about some fun and edible bonding time with your child? This is a delicious yet healthy pancake recipe. Preparing food and cooking is useful as we remain in our homes. Now is a good time to involve your children and let them help out and learn to love cooking! Cooking together is a great way to break up the day, talk with your child and moreover, it leads to a sense of self-accomplishment for both you and your child, so let’s get started!

Ingredients
- 1 ripe banana
- 2 eggs
- 1 cup whole wheat flour (can be substituted with white flour too)
- ½ cup milk

Instructions
Combine 1 banana, 2 eggs, 1 cup of whole wheat flour, and ½ cup of milk into a blender. Blend well until the batter becomes smooth. If you don’t have a blender available, this part can be done using a whisk. You can whisk until smooth.

Then transfer the batter into a small bowl. During this time, you can add in extra ingredients. Your child may wish to include blueberries, sprinkles, or chocolate chips.

Lightly grease a large pan and heat over medium-low heat.

Use a tablespoon to scoop batter onto the pan.

Cook 2-3 minutes until bubbles start to appear, flip and cook an additional 2-3 minutes.

Engaging Your Child:
Food prep and cooking are completely hands-on experiences. Consider ways to encourage your child to lead during this process. Here are some steps where he/she could take the lead: let child choose the banana, let child crack an egg, let child pour in flour/milk, let child combine all the ingredients, let child whisk the ingredients, and so on. The more that they can be involved during this experience, the more accomplished he/she can feel.  Provide your child with positive encouragement throughout the process, this will help reinforce a positive regard for self. “Thanks for picking out the perfect banana” "You poured the milk and the flour into the bowl all by yourself!” “We made the most delicious pancake, didn’t we?”.
