Basic Banana Muffins

Preparing food can be an enjoyable experience for your whole family to be involved in.  As an activity, baking involves reading, measuring, mixing, stirring, counting, scooping, pouring, etc. It is loaded with learning and now is a good time to nourish your child’s love for helping out in the kitchen. Baking is a great way to break up the day, talk with your child and moreover, it leads to a sense of self-accomplishment for both you and your child. Encourage your child’s budding independence by giving him/her some child sized responsibility throughout this experience. Let’s get started with this super simple banana muffin recipe. 
 

Ingredients: 

  • 1-1/2 cups all-purpose flour 

  • 1 cup sugar 

  • 1 teaspoon baking soda 

  • 1/2 teaspoon salt 

  • 3 medium ripe bananas 

  • 1 large egg, room temperature 

  • 1/3 cup vegetable oil 

  • 1 teaspoon vanilla extract 
     

Directions: 

  1. In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups half full.  

  1. Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
