Frozen Yogurt Bars
Enjoy the last few weeks of summer vacation by making some healthy frozen treats. This next easy to prepare recipe will surely get the kids excited, so give it a try!

- 2 cups of Greek Yogurt (or a yogurt of your choice)

- 5 oz Blueberries (fresh or frozen)

- 2 oz Berries of your choice

- 1 tsp Vanilla Extract

- ½ Lemon, juiced

- 4 tbsp Maple Syrup

- Bowl

- Saucepan

- Baking Dish

- Wax Paper

1. Combine the lemon juice and blueberries in a saucepan and bring to a simmer. Cook until all the blueberries have popped and allow to cool off.

2. In a medium bowl combine the yogurt, vanilla and maple syrup. Fold in the blueberry sauce once cooled.

3. Line a shallow baking dish with wax paper and pour in the yogurt mix.

4. Sprinkle with the fresh berries and freeze 4 to 6 hours until frozen solid. Cut them into 2-3-inch bars and enjoy.
Before you start preparing the yogurt bars, invite your child to help set-up. Ask them open-ended questions to encourage conversation “What bowl do you think we should use to stir the yogurt in? How long do you think it will take for the yogurt to freeze?” Provide your child with mini tasks to do during the process for example; stirring the yogurt, pouring the puree into the bowl in small quantities, sprinkling on the berries.
