Whole Wheat Zucchini Chocolate Chip Muffins
Put on your aprons and roll-up your sleeves and enjoy quality time with your child making healthy and delicious muffins. As we know, children can learn and strengthen a variety of skills in the kitchen. But with today’s activity, let’s focus our experience on enhancing vocabulary and promoting nutrition and healthy eating through conversations.

- 2 eggs

- 3 ripe bananas

- 2 tsp vanilla

- 1 1/2 cups brown sugar

- 2 cups milk

- 3 1/2 cups whole wheat flour

- 1 Tbsp baking soda

- 1 Tbsp baking powder

- 1 Tbsp cinnamon

- 2 tsp salt

- 3 cups shredded zucchini

- 2 cups mini or regular chocolate chips

- Whisk

- Muffin pan

- Bowl

1. Preheat the oven to 350.

2. Combine the eggs, banana, vanilla & brown sugar and mix well.

3. Mix in the milk & flour together so it doesn't splatter all over. Add the baking soda, baking powder, cinnamon and salt. Mix together until batter forms.

4. Mix in the shredded zucchini and chocolate chips.

5. Pour into greased muffin pan, filling 2/3 full.

6. Bake in the preheated oven for 22-24 minutes. Let cool slightly before servings.

To Freeze: Let cool completely to room temperature before adding to plastic freezer baggie or container.
As caregivers we should nurture children's healthy development and support their growing sense of self. Start-off by talking about the ingredients you are using and the different food groups they come from (dairy, grains, fruits, vegetables). Provide fun facts as you go along, “this green zucchini is a type of squash and it belongs to a family of pumpkins”. Talk to your child about the value of eating healthy foods and ask them open-ended questions about what foods they like to eat, “What are some of your favourite vegetables?”.
