Cinnamon Baked Plantains

Plantains are a staple food in the tropical regions of the world. Plantains are incredibly popular in African, Caribbean and Latin cuisines. The plantain is a member of the banana family but is treated more like a vegetable. It is much larger than a banana, full of starch and can be boiled, baked, fried or cooked. It can be served as an appetizer, snack, side dish or as a dessert. As you can see, plantains are a versatile and delicious addition to your kitchen!
Today we are making cinnamon baked plantains. Let’s provide a rich experience for children by involving them in the kitchen. This sweet and savoury dish is easy to make and delicious to devour.

- 2 ripe plantains

- 1/2 cup oil or melted butter or coconut oil

- 2 tablespoons brown sugar

- 1 tablespoon cinnamon

- Pinch of salt

- Knife
-
- Small bowl
-
- Large bowl

- Baking sheet

- Baking sheet liner: Aluminum foil or parchment paper

1. Preheat oven to 350 degrees

2. Wash and peel off the plantain’s skins.

3. Slice the plantains into rounds, about ¼ inch in thickness.

4. Place sliced plantains in the bowl.

5. Pour the oil or melted butter over the slices and toss gently.

6. Line the baking sheet with parchment paper or foil.

7. Spread plantains in a single layer.

8. Mix the brown sugar, cinnamon and salt in a small bowl.

9. Sprinkle mix on the slices.

10. Bake in oven for 20-25 minutes. Check often to make sure they don’t burn.

11. Remove from oven, let cool and serve!
Invite your child to cook this delicious dish with you. Cooking can engage your child in many ways. It engages them to count, measure, follow a sequence, follow directions and observe the cause and effect of the baking process. Go through each step of the process together and encourage them to smell and feel the ingredients, this will engage them to use their senses to explore the ingredients. Enrich their vocabulary by narrating what you are doing. While the plantains are in the oven, revisit it every 5/10 minutes to observe what they look like. Praise their efforts and enjoy the delicious dish together!
