Cake Yazdi

Today we are baking an Iranian traditional mildly sweet cupcake called Cake Yazdi. This delicious, soft and puffy pastry is filled with Persian flavors such as rosewater and grated cardamom and is a tasty snack that is easy to make with the children.
What You will Need

3 eggs
-
2 cup flour
-
1 teaspoon baking powder
-
2 tablespoon honey or ½ cup sugar
-
1 cup melted butter
-
1 cup plain yogurt
-
1 tablespoon rosewater
-
½ teaspoon cardamom powder
-
Sesame seeds-optional
Process
-
In a bowl, mix flour and baking powder and set it aside.

In a large bowl, mix the eggs and sugar until combined.

Add melted butter, yogurt, rose water and grated cardamom and mix well.

Add half of the flour mixture to the wet ingredients and stir.

Add the remaining flour and mix until combined.

Transfer the mixed ingredients to the baking tray.

Optional: Top with sesame seeds.

Bake in the oven for 8-10 minutes at 400F.

Reduce the oven temperature to 350F and continue baking for 10 more minutes.

Take the cupcakes out of the oven, let cool for 10-15 minutes before you serve.
Engaging with Your Child
Involving children in preparing foods will support their learning about healthy eating habits and strengthen the bond between you and your child. Take this opportunity to educate your child about the food groups, portions and benefits of nutrition the same way we would educate them about the ABC’s and colours.
Talk about the choices we make with food and how food can have serious effects on our energy and body. Do not label foods as bad and good foods, instead, describe foods by talking about their benefits, vitamins, energy, etc. Ask your child to measure, add, mix, taste and be actively involved in the process. Try to use neutral-tone language and ask your child open ended questions such as “What's your favourite ingredient we’re using? Why?” and “What do you think this will taste like?”. Cooking and baking can give a child a sense of accomplishment so remember to praise their effort.
